A Yummy Recipe

With times getting tough and we decided as a family to start trying recipes that will use things that we have in our pantry. We figured we might try them out while we are able eat something different if it doesn't turn out good. To our surprize it was quick, easy and DELICIOUS! It comes from Campbell's 1-2-3 Dinner Cookbook.

FIESTA CHICKEN AND RICE BAKE

1 can Cream of Chicken Soup
1 cup Pace Salsa
1/2 cup water
1 can whole kernel corn
3/4 cup regular white rice
4 skinless, boneless chicken breast
1/2 cup shredded cheese

Mix soup, salsa, water, corn, and rice in a 2-quart shallow baking dish. Place chicken on top, cover and bake at 375 for 45 minutes or until chicken and rice are done. When complete sprinkle with cheese.

** I made a few modifications. I used tenders and next time I will cut them into chunks and mix it in with the soup mixture. Also, I doubled the recipe and baked it in a glass 9x13 pan and covered it with foil. I am please to say we didn't have any left overs and the kids said this was great!
